Spring is around the corner and at least for me, that heavy and warm soup time is more or less over now! I discovered this soup at a very good friend of mine and we prepared it together. A very light and delicious, fresh soup! Give it a try!

Ingredients for 2 as a main or for 4 as a starter
Annika’s recipe
60g Quinoa
250ml water
1 1/2 teaspoons instant vegetable broth
100g leek, cut into slices
100g mushrooms, quartered
1/2 a broccoli, cut into little florets
Juice of 2 limes (or lemons if you only have them in the house)
2 tablespoons soy sauce
Fresh cilantro to taste, chopped
Optional: Add Tofu or chicken
Directions
Put Quinoa into a cup. Fill a pot with the double amount of water (2 cups) and heat until it boils. Then add the vegetable broth and Quinoa and let simmer for approx. 5 minutes.
Heat the 250ml water in another pot and add the broccoli, leek and mushrooms. Add soy sauce, lime juice and Quinoa (incl. any additional water from the pot) and let boil another 5 minutes.
Meanwhile wash and chop the fresh cilantro.
Serve the soup in bowls. Sprinkle a few cilantro leaves on top for garnish.
