Simple salad, looks beautiful and tastes deliciously summery! To be honest, I more or less scattered together what I still had in the house, having been too lazy to go grocery shopping and the result was great. Plus the Swiss national colors for the 1st of August national day!! Happy birthday Switzerland!

Ingredients
1 pack cherry/small tomatoes (300g)
1 feta cheese (approx. 200g)
50g Pine nuts
Juice of 1/2 lemon
1-2 tablespoons Olive oil
Salt & pepper

Directions
Roast the pine nuts in a pan (no oil needed!), stirring continuously, so they don’t burn (which happens really easily). Set aside in a separate bowl and let cool.

Wash and pat dry the cherry tomatoes. Open the feta cheese and also cut into little squares.

Place tomatoes & feta in a bowl, add the pine nuts on top. Drizzle with the juice of 1/2 the lemon and 1-2 tablespoons of olive oil. Salt & pepper to taste. Enjoy!
