We were in beautiful Italy a last week and in a small restaurant in Camaiore I was introduced to ‘Salsissia Prociutella’ – a funny sausage that was prepared in a pasta sauce. I immediately fell in love and prepared my own version at home…in memory of our vacation!

Ingredients for 4
For the sauce:
300g Salsiccia Prosciutella sausage (or a different similar sausage)
1 onion, chopped
1 handful of dried tomatoes, cut into fine stripes
1 cup of white wine
100ml of vegetable broth (Gemüsebrühe)
100ml cream
Salt & pepper

Additional ingredients:
400-500g pasta
Parmesan cheese, grated

Directions
Prepare the pasta according to the pack.
Meanwhile fry the chopped onion in a pan with the olive oil. Remove the sausage from its casing. Add to the pan with the onions.

Deglaze with a cup of white wine and let simmer for a moment, then add the vegetable broth. Add the cut dried tomatoes and cream last. Season with salt & pepper (careful with the salt, the sausage is quite salty!).

Grate the parmesan cheese and serve separately so everyone can sprinkle over their pasta themselves.

Place pasta on a plate and top with the sauce. And you are ready to eat! Enjoy!
