Oven Cauliflower & Chickpeas with Tahini-Lemon dressing

Looking for more healthy, but easy to prepare home office meals that more or less cook themselves, I stumbled upon this gem and of course wanted to share. Grilled Pineapple with Burrata

This salad / starter / BBQ side is a taste explosion. With the slightly caramelized sweetness of the e pineapple which increases whilst on the BBQ and the Burrata – just perfect.

Tomato & Feta Salad with Pine Nuts

Simple salad, looks beautiful and tastes deliciously summery! To be honest, I more or less scattered together what I still had in the house, having been too lazy to go grocery shopping and the result was great. Plus the Swiss national colors for the 1st of August national day!! Happy birthday Switzerland!

Caprese Salad with Artichoke Hearts

Loving this typical Italian caprese salad, this time I prepared it with a little twist: With artichoke hearts for the “green” instead of the typical basil leaves. Once again super simple, easy and fast to prepare and just delicious. Definitely worth a try, especially if you like archtichoke hearts as much as I do!!

Burrata with Fresh Peaches & Pine Nuts

With the warm temperatures I always enjoy eating a cool and light dinner (or starter). I had a similar dish at an invitation of friends and recreated it with a little twist! This fruity, nutty mixture with the creaminess of the Burrata is a delight for your taste buds. Hope you like it as much as I did! Hmmmm….
