Burrata with Fresh Peaches & Pine Nuts

With the warm temperatures I always enjoy eating a cool and light dinner (or starter). I had a similar dish at an invitation of friends and recreated it with a little twist! Salad with Oatmeal-Breaded Chicken Nuggets

Shortly I was on a trip, coming home and at the airport I stumbled over a salad with chicken nuggets. Instantly I had a major craving for this, but – typical airport – they priced the salad super high and I just thought to myself: Oh well, then I know what’s on my menu the next week! And here we are! Beetroot & Feta Salad

I had this salad at a close friends place a few years ago and it is just so deliciously easy to prepare, that I made my own version here. Plus the good thing is, you can have both in the house and can prepare if you get spontaneous guests, as feta has a really long-lasting expiration date. Give it a try!
