Butternut Pumpkin Soup with Leek

Pumpkin Season is always great! And the variety of all the pumpkins is so big – it always astonishes me. This year round, I really enjoy preparing dishes with the butternut squash / pumpkin. It has a sweet, nutty taste and is ideal for a soup. But you can of course also prepare oven-roasted butternut pumpkin chunks – sprinkle a little cinnamon on top – so yummy!

Lettuce Hearts with Meatballs, Avocado & Dates


With the nice weather outside I really crave a healthy lunch or dinner. My fridge still had a bit of minced meat left, so I thought I might aswell prepare a salad with meatballs! It turned out really nice and due to the fact that meatballs are delicious warm and cold, it’s great to prepare.

Caprese Salad

Yay – the sun is out again!! But this classic tastes great all year long! A typical Italian – red, white and green – salad, which goes with just about anything. It’s simple, it’s delicious and you can serve in so many different styles. Plus ideal to keep the summer up a little longer!

If you prepare for a few people, I very much like to use cherry tomatoes and smaller sized mozzarella balls. And fresh basil of course. It looks very nice and is easy to serve.

Gilthead Seabream (Dorade) with Mediterranean Vegetables

This is a really delicious and great to pre-prepare dinner dish if you have guests. The oven does all the work and you can prep easily and clean up before the guests arrive. And it’s a fairly light and healthy dinner, giving you a little room to have a heavier starter and/or dessert.
