Minced Meat, Carrot and Potato Stew

The winter has been cold and snowy and what better can you heat up with, than a delicious stew. My friend Caro made it once and I have honestly been making this soup nearly every week since. It’s super fast to prepare or you can also pre-prepare it and eat later. In any case, one of my favorite finds this winter.

By the way, you can also put soup noodles inside instead of the potatoes. I always need to prepare a portion, as my oldest doesn’t like the cooked potatoes – grr! Plus I always add the dried spices later…

Spinach, Artichoke and Chicken in Coconut Milk with Rice

Always on the lookout for new everyday dishes that don’t require endless time to prepare, this is once again ideal. Loving artichoke hearts and baby spinach and in combination with the coconut milk just gives the extra something. I am sure this dish is also great with quinoa or Couscous or even Asian Udon noodles. Tagliatelle with Mushroom, Leek & Spinach Sauce with Cashews

Cheese Spaetzle (Käsespätzle)

One of my favorite dishes, especially on colder days or when on vacation in the mountains: Käsespätzle (cheese spaetzle). Amazingly easy to make, at least since we bought a special “plane/grater” to prepare the spaetzle.

Polpettine with Tomato Sauce
