Spinach, Artichoke and Chicken in Coconut Milk with Rice

Always on the lookout for new everyday dishes that don’t require endless time to prepare, this is once again ideal. Loving artichoke hearts and baby spinach and in combination with the coconut milk just gives the extra something. I am sure this dish is also great with quinoa or Couscous or even Asian Udon noodles. Cheese Spaetzle (Käsespätzle)

One of my favorite dishes, especially on colder days or when on vacation in the mountains: Käsespätzle (cheese spaetzle). Amazingly easy to make, at least since we bought a special “plane/grater” to prepare the spaetzle.

Quiche with Goat Cheese & Figs, Prociutto, Honey & Walnuts

We are enjoying our lovely family vacation in the beautiful house of my in-laws in Tuscany. They not only have a great pool, donkeys, a tractor (yes, all the things my little one adores), but also fig trees in the garden. And lucky enough – we just harvested the last figs of the season! So what else could I have done than directly prepare a meal with them included?
