Burrata with Fresh Peaches & Pine Nuts

With the warm temperatures I always enjoy eating a cool and light dinner (or starter). I had a similar dish at an invitation of friends and recreated it with a little twist! This fruity, nutty mixture with the creaminess of the Burrata is a delight for your taste buds. Hope you like it as much as I did! Hmmmm….

Pasta with Pesto Rosso

Pasta is just one of the best inventions ever. Just plain with butter and parmesan cheese or with all the variations of sauces that are possible. This Pesto Rosso is a very nice alternative to the typical “normal” pesto Genovese. It’s great as a dip with some crackers or grissini, as well as on pasta. Simple to make and ideal to store for a few days in the fridge.

Potato & Bacon Roses

The BBQ Season has finally started and our BBQ space is mostly occupied with meat in some sort. So I actually like preparing the sides in the oven. And these beautiful potato & bacon roses make a great side dish – not only tasty, but they beautify the table too. They are quite simple to make, so give them a try!

Asparagus Tonnato

Not sure about you, but I for myself love Vitello Tonnato. And this adapted version is delightful. Fairly light (mixing cream cheese with mayonnaise) and perfect to have as variation for the asparagus season. Did you know that white and green asparagus have the same origin, just one sees the sunlight and the other doesn’t? Crazy nature. But delicious in any case!
