Tomato & Feta Salad with Pine Nuts

Simple salad, looks beautiful and tastes deliciously summery! To be honest, I more or less scattered together what I still had in the house, having been too lazy to go grocery shopping and the result was great. Plus the Swiss national colors for the 1st of August national day!! Happy birthday Switzerland!

Caprese Salad with Artichoke Hearts

Loving this typical Italian caprese salad, this time I prepared it with a little twist: With artichoke hearts for the “green” instead of the typical basil leaves. Once again super simple, easy and fast to prepare and just delicious. Definitely worth a try, especially if you like archtichoke hearts as much as I do!!

Burrata with Fresh Peaches & Pine Nuts

With the warm temperatures I always enjoy eating a cool and light dinner (or starter). I had a similar dish at an invitation of friends and recreated it with a little twist! This fruity, nutty mixture with the creaminess of the Burrata is a delight for your taste buds. Hope you like it as much as I did! Hmmmm….

Asparagus Tonnato

Not sure about you, but I for myself love Vitello Tonnato. And this adapted version is delightful. Fairly light (mixing cream cheese with mayonnaise) and perfect to have as variation for the asparagus season. Did you know that white and green asparagus have the same origin, just one sees the sunlight and the other doesn’t? Crazy nature. But delicious in any case!

Prosciutto, Mozzarella & Sun-dried Tomato Appetizer Skewers

I am a great fan of mozzarella, tomato and basil (and avocado ideally), but wanted to prepare something a little different as an appetizer. Instead of fresh tomatoes I used sun-dried ones and added a slice of prosciutto last. A great taste explosion in your mouth, easy to prepare and just delicious. Give it a try!

Fried Halloumi Cheese with Coriander-Caper-Lime Vinaigrette

One of my absolute favorite vegetarian dishes. Ideal as a side dish for a BBQ meat or as a starter. Both works perefectly well. Simple to make and due to the fact, that Halloumi has such a long shelf-life, you can have a pack in the fridge for any unexpected guests! And you can leave out the coriander, if you should not be a fan (or if you don’t have any at home). The first time I made this was with my mom and we instantly fell in love with this recipe!
