Minced Meat, Carrot and Potato Stew

The winter has been cold and snowy and what better can you heat up with, than a delicious stew. My friend Caro made it once and I have honestly been making this soup nearly every week since. It’s super fast to prepare or you can also pre-prepare it and eat later. In any case, one of my favorite finds this winter.

By the way, you can also put soup noodles inside instead of the potatoes. I always need to prepare a portion, as my oldest doesn’t like the cooked potatoes – grr! Plus I always add the dried spices later…

Butternut Pumpkin Soup with Leek

Pumpkin Season is always great! And the variety of all the pumpkins is so big – it always astonishes me. This year round, I really enjoy preparing dishes with the butternut squash / pumpkin. It has a sweet, nutty taste and is ideal for a soup. But you can of course also prepare oven-roasted butternut pumpkin chunks – sprinkle a little cinnamon on top – so yummy!

Parsnip Soup with Pecan Nut & Pear Topping

Fall is really here now – the cold temperatures definitely show this. So this heralds the soup season…
Here is the first soup of the season recipe which has a little tang to it with the special topping, giving the pureed consistency of the soup a little crunchy touch to it and the pear adds freshness. Of course you can leave out the pear if you prefer.
