With the warm temperatures I always enjoy eating a cool and light dinner (or starter). I had a similar dish at an invitation of friends and recreated it with a little twist! This fruity, nutty mixture with the creaminess of the Burrata is a delight for your taste buds. Hope you like it as much as I did! Hmmmm….

Ingredients for 6 as a starter or 2 as a main course
400-600g Burrata
4-6 peaches (or nectarines)
Approx. 50g Pine Nuts, roasted
Juice of 1 lime (optional: add a bit of the zest on top)
Olive oil (approx. 1 tablespoon per plate)
Salt & pepper
Fresh mint leaves

Directions
Roast the pine nuts in a pan (no oil needed!), stirring continuously, so they don’t burn (which happens really easily). Set aside in a separate bowl and let cool.

Pull apart the Burrata into chunks, wash and cut the peaches into slices. Wash and pat dry the mint leaves and garnish nicely on top of the salad. Pour the pine nuts over the Burrata & peaches. Drizzle the fresh lime juice on top, as well as the olive oil. Salt & pepper to taste.
