
One of my favorite desserts is Panna Cotta. An absolute Italian classic. It’s simple but versatile with what you can put on top (caramel, berries, etc.) and really easy to make. Also ideal to pre-prepare, so you don’t need to think about the dessert when preparing a dinner party.
Here is what you need to make it:
Ingredients for 4-6:
500g liquid cream
40g sugar
1 vanilla pod, split lengthwise
3 gelatine sheets
Topping:
Either prepare caramel or a strawberry sauce and use berries to garnish. Delicious for winter / Christmas time is also a cranberry sauce.
Directions:
Add the sheets of gelatine to a bowl of cold water and soak for approx. 5 mins.
Pour the liquid cream into a pot together with the sugar and vanilla seeds (to scrape the seeds out of the pod, use the back of a knife). I always put the vanilla pod inside for extra taste. Stir to combine and bring to a simmer (let simmer, but not boil for approx. 5 minutes), then remove from the heat. Remove the vanilla pod from the pot.
Take the gelatine out of the cold water and squeeze out the excess water, then add to the cream mixture. Stir until completely dissolved.
Now gently pour the mixture into 4-6 little bowls or glasses and let cool. Once cooled off, place into the fridge until firm. This needs 4-6 hours or best over night. So ideally also to make in the winter time to save fridge space if you have the option to cool outside 😉.

Before serving, pour a little (not too much) of a fruit/berry mixture on top, then serve! Enjoy!
Cranberry Sauce:
200g cranberries, 100g sugar, 100ml water, let boil, then simmer for 10 minutes and purée- you can use leftover sauce also for a Cranberry Gin & Tonic for example! I also add sugared cranberries as garnish!
