Muffins are just always convenient. Kids birthday party? Muffins. Need a snack? Muffins. And what I really like is, that you can just prepare the base and easily toss anything you crave inside the dough, varying from just plain, chocolate chips or raspberries. Here is the delicious and quick base dough:

Ingredients

100g butter, softened

100g sugar

1 pack of vanilla sugar

A pinch of salt

2 eggs

200ml milk

250g flour

2 tablespoons of baking powder

1/2 teaspoon baking soda

Optional: powdered sugar to garnish later, chocolate chips or frozen raspberries to add to the mix

Preparation:

Preheat the oven to 170°C air circulation.

Mix together butter, sugar, vanilla sugar and the pinch of salt. Then add the eggs. Once nicely combined add the milk. In a separate bowl, mix together flour, baking powder and baking soda. Add to the rest.

If you want to add chocolate chips or frozen raspberries, ideally mix them into the dough and then pour the mix into muffin forms (I got 12 large and 12 small ones from the dough) or add them later (just takes a little longer).

Place in the oven for approx 15-20 minutes until golden brown (I tested them with a wooden skewer – if still doughy, leave in for another bit).

Remove from the oven, possibly add powdered sugar or just enjoy!

Tip on the side: you can easily transform the muffins into cupcakes – what do you need?

Beat 125 g soft butter and 100 g powdered sugar with a whisk or hand mixer for approx. 2 mins. until fluffy. Gradually stir in 200 g heavy cream cheese, adding a few drops of food coloring if desired. Spread the mixture over the cupcakes using a piping bag. Garnish with sprinkles if you like! Enjoy! 🧁
