The sun is making its way out more and more, making at least me wanting to eat nice and light things, leaving the heavier winter dishes behind. I really like this new find and wanted to share with you!

Ingredients

For 2-4 as a starter / side

4 artichoke hearts

2 Burrata (or a few mini burrata)

A few fresh mint or basil leaves (both work)

2 tablespoons Olive oil

Crema di Balsamico

1 Lemon

Salt & pepper

Directions

Heat a pot with water. Add salt and 1/2 lemon.

Cut the artichoke hearts in the front part, remove the larger leaves and cut the bottom slightly so all the hard bits are removed.

Cook the artichoke hearts in the water until tender. Remove and rinse shortly with cold water. Heat a pan with oil.

Peel open the artichoke hearts so they look like a flower. Now add to the pan and fry slightly on both sides. Chop the mint (or basil).

Remove and place on a plate, place Burrata (possibly pull the cheese apart a little) on top, drizzle with a little olive oil and the other half of the lemon, drizzle crema di Balsamico on top and garnish with the chopped mint leaves and season with salt & pepper to taste. Serve and enjoy!
