Parmesan-Breaded Veggie Kohlrabi Schnitzel with Cucumber Salad

ParmesanBreadedKohlrabiSchnitzelWithCucumberSalad.jpg

Another very nice vegetarian dish, easy to prepare and a nice alternative for a weekday dinner. And I love cucumber salad always and everywhere! Hope you like the combo.

Did you know that Kohlrabi has a German origin, coming from the words «Kohl» (cabbage) and «Rabi» (Swiss German for turnip)? And as it is not so common, the original German name «Kohlrabi» stuck even in English-speaking countries or is translated into cabbage turnip!

Lambs Lettuce with Bacon-Wrapped Dates

Prettaly_LambsLettuceWithDatesInBacon.jpg

One evening I was looking into the fridge and was deciding what to cook for the evening. I often have lambs lettuce and avocado in the house (as you might have noticed – both favorites in my kitchen) the bacon and dates caught my eye. In Germany we call dates rolled into bacon as follows: «Dates in Bacon-Coat». The combination of the salad, avocado and dates with bacon was an absolute delight! Hope you like it.

Lambs Lettuce with Seed-breaded Feta

Prettaly_LambsLettuceSeedBreadedFeta.jpg

The sun is out and a fresh salad is all you can think about? Here is a great way to add a little extra to your salad! Feta is always nice with salad, but the crust makes the whole salad to a real lunch or dinner and doesn’t leave your hungry. You can of course also prepare as a starter. The crispy crust is delicious and I can also imagine other fruit that would go well with it!

Thanksgiving Cranberry Celery Salad

Prettaly_Thanksgiving_CranberryCelerySalad.jpg

This wonderful fruity and light salad is from a former American colleague of mine. I remember being invited over to a Thanksgiving dinner and she had prepared this salad next to a variety of delicious other things. What I really like about this salad is, that it is something fresh next to all the delicious offerings on the Thanksgiving table. Plus it is super simple to prepare. I have to admit, I just combined everything from scratch that I still remembered, so I hope I got the recipe halfway right. But the result was delicious in any case! The last sun rays are warming our souls and just before we go into the whole autumn food (which I am very much looking forward to!), a salad is just what you need. And figs are great this time of year and give the little extra to the recipe.

Detox Salad: Spinach, Shrimp, Avocado & Pink Grapefruit

DetoxSpinachShrimpAvocadoSalad.jpg

A wonderful food inspiration from a good friend, who has her own blog – but I need to warn you, its in French! She made me this salad one day and I fell in love with it straight away. Perfect detoxing, great ingredients, beautiful to look at and absolutely delicious. I actually make it year round.

Potato Salad With Avocado Dressing & Almonds

Prettaly_PotatoSaladWithAvocadoDressing.jpg

Potato salads are a little difficult I find. I am not a big fan of dressings drenched in mayonnaise (not that I don’t love mayonnaise, but I save my portion when eating with french fries) and often its rather tricky to prepare a real good potato salad. So I experimented a little and I think it turned out really well , combining one of my favorite ingredients – the avocado – into a dressing for the potatoes! Hope you like it!
