One evening I was looking into the fridge and was deciding what to cook for the evening. I often have lambs lettuce and avocado in the house (as you might have noticed – both favorites in my kitchen) the bacon and dates caught my eye. In Germany we call dates rolled into bacon as follows: «Dates in Bacon-Coat». The combination of the salad, avocado and dates with bacon was an absolute delight! Hope you like it.

Here´s how to prepare:

Ingredients for 2
For the salad:
150g lambs lettuce
1 avocado

For the dates in bacon:
10 medjool dates (the nice fat and juicy ones are best)
10 rashers of bacon

For the dressing:
1 teaspoon Dijon mustard with Honey (au Miel)
1 teaspoon L’Ancienne mustard
2 tablespoons olive oil
1 tablespoon white balsamic vinegar
Salt & pepper

Just add more of the ratio if you need additional dressing.

Directions
Wash and dry the lambs lettuce. Peel the avocado and cut into little squares. Set aside.

Prepare the dressing, by whisking the ingredients above together.

Slice the dates and remove the pit and then wrap a rasher of bacon around it and sticking a toothpick through both to hold them together.

Heat a coated pan (if you don´t have one, use a normal pan and add a little sunflower oil so the bacon doesn´t stick to it) and then fry the dates with bacon on all sides until nice a crispy, approx. 5-10 minutes on medium heat.

Mix the salad and avocado with the dressing. Place the fried dates with bacon on top and serve whilst still warm!
