This is a recipe my mother used to prepare quite frequently when autumn came along. It warms you from the inside and with the ingredients also fills you up, not leaving you hungry. And it’s so simple to make with just a few ingredients!
See what you need to prepare:
Ingredients
1 small broccoli
3 carrots
1 liter vegetable broth
1 pack Coconut milk (approx. 250ml)
1 teaspoon curry powder
A bit of ginger, finely chopped
1 pack of glass noodles
Coriander (cilantro)
Directions
Heat the vegetable broth. Peel and cut the carrots in round slices, wash and cut the broccoli in small florets. Add both to the broth.
Prepare the glass noodles according to pack. Once ready, put inside the pot, adding the peeled and finely chopped ginger and coconut milk.
Wash and prepare the coriander to garnish on top of the soup bowls. Enjoy!
