As one of the biggest avocado lovers in the whole wide world (my friends can testify!), I just had to try this recipe. I found it while flipping through the Cosmopolitan magazine. A nutty, (I think vegan), fresh tart, which is just a little different than anything else you have probably had in the last months. Plus: no need to bake!

Ingredients for 6

Dough
150g walnuts
7 big dates (the juicy nice ones)
6 tablespoons of flax seeds
1½ tablespoons coconut oil
Topping
3-4 avocados
2 limes (juice and zest)
2 tablespoons of agave syrup
1 tablespoon of clear honey
Directions
Start with the dough – purée the walnuts, dates and flax seeds. Heat 1½ tablespoons of the coconut oil in a small pan (or microwave) and add to the mix until you have doughy substance. Fill the dough into a flat cake pan and let cool for approx. 2-3 hours in the fridge.
For the filling – mix the avocados with the juice of 2 limes and the zest of one of the limes (I usually grate the zest off one lime and then remove the juice afterwards), add the agave syrup and honey, as well as the remaining 1 tablespoon of coconut oil until you have a nice and creamy substance.
Spread the avocado mixture onto the dough and decorate with a slice of lime.
