We had a girls night in lately and one of my friends brought this great salad. The fresh strawberries, combined with edamame – just great, very light and the colors speak for themselves!

Here is the recipe:

Anna’s recipe
For the salad:
1 pack (approx. 150-200g) of baby spinach salad (or other green salad)
500g strawberries
150g edamame (best to get the already peeled and ready to eat ones)

For the sauce:
2 heaped teaspoons L’Ancienne mustard
1-2 teaspoons white balsamic vinegar
4 tablespoons olive oil
Salt & pepper

For the salad:
Wash the salad and strawberries. Place the salad in a bowl. Cut the strawberries into quarters and add the peeled edamame. Top with the sauce, stir and enjoy!

For the sauce:
Whisk all ingredients together.
To prepare more, just add more of the ingredients in the same proportion as listed above.
