Summer has finally arrived!! And we are always looking for desserts that are lighter and also practical to take along if you are invited or on the way to a picnic. Give this delicious moist coconut cake a try!  It originates from Brasil and is called «Bôlo de Côco». And another plus: it’s gluten free!! Best is to use a bundt form for preparation.

200g desiccated coconut
1 can sweetened evaporated milk (approx. 400ml)
4 eggs
1 pack baking powder (approx. 15g)
1 pack vanilla sugar (approx. 8g)
Butter to grease the bundt form

Pre-heat the oven to 200°C (oven set to air circulation).


Mix all ingredients above together. Butter the bundt form, so the cake can easily be taken out later. Fill in the cake batter and bake for 30 minutes. Remove from the oven and let the cake cool before removing it from the baking tin.


Try it with ice cream! Yum!!
