Next to all the lovely Advent and Christmas seductions, here is a healthy, quick and simple recipe. I more of less reused the yoghurt sauce that I already posted in a different recipe, but just thought it would match nicely. This recipe is surely also great in summer time.

Ingredients for hungry 2 as a main course
1 can of chickpeas, drained
1 large avocado
2 spring onion stalks, chopped
1 teaspoon ground cumin
1 egg
1 tablespoon fresh lime juice
50g crème fraiche
Salt & pepper
Sunflower oil to fry the burgers

For the yoghurt:
½ pack of fresh mint
3 tablespoons of Greek yoghurt
3 tablespoons of plain yoghurt
zest of ½ a lime
Salt & pepper

Directions
Drain the chickpeas and purée with a mixer.  Finely chop the spring onion. In a bowl, combine the chickpea purée, spring onions, egg and crème fraiche. Season with cumin, salt and pepper. Halve the avocado, remove the pit and cut into small squares. Drizzle with lime juice and gently fold under the chickpea mixture.

Heat a frying pan with sunflower oil. With a tablespoon, form little burgers and place in the pan and fry them for 5 minutes on each side until golden brown.

In the meantime mix the yoghurt, chopped mint and lime zest together and add salt and pepper.

To serve: Spread the yoghurt on each plate and place the burgers on the side. Enjoy!
