When you invite a few guests it’s always really nice to have something homemade and special as an aperitif. These chips are very simple and easy to prepare, even a day or two prior to the invitation. What really struck me, was the fact that the sweet potato slices shrunk in size quite a bit! But delicious in any way…

Ingredients
2 sweet potatoes, finely sliced
Olive oil
Salt & pepper
Alternative: sweet paprika spice or cinnamon

Directions
Pre-heat the oven to 150°C (air circulation).
Peel the sweet potatoes and cut into very thin slices (I used a mandolin slicer).
Place the slices onto a parchment paper lined baking tray carefully next to each other.

Drizzle with olive oil (not too much!!) and season with salt and pepper. Alternatively you can also add cinnamon on top or sweet paprika spice instead. My favorites were the salt & cinnamon version!

Place in the oven for 10-15 minutes and then turn the potato slices and put in the oven again for another 10-15 minutes until nicely browned. Then remove and let the chips cool off on a rack with paper towels so they can drip off any excessive oil.

Enjoy once cooled off.
