I’ve always been a big fan of ground meat, especially in a casserole style. The sweet potatoes give this recipe a special sweetness and makes it a little different to other tastes you usually experience. And the cheese on top is yummy scrummy. A perfect comfort food for an easy weekday dinner at home or ideal for kids…

Ingredients for 6
1kg ground beef
1kg sweet potatoes
1 medium sized onion, finely diced
200g herb cream cheese (for the Swiss, I used Cantadou Basil & Chives)
3 tablespoons milk
150g grated gouda cheese (or similar)
Salt & pepper

Directions
Pre-heat the oven to 200°C (air circulation).

In a pan, fry the ground beef until it crumbles. Peel and dice the onion and add to the beef.

Wash and finely slice the sweet potatoes (I used a mandolin slicer). Add to the pan with meat and cook for approx. 5 minutes. Season with salt & pepper to taste.

In a bowl combine the cream cheese and milk (maybe you need to add little more milk) until you have a creamy consistency, then add to the meat and potato mix.

Now pour the whole mix into a casserole and crumble the grated cheese on top.
Place in the oven for approx. 30 minutes until the cheese is golden-brown.
