Wow – what a taste explosion! We had a girls night out lately and my friend made this wonderful salad. I changed a few bits and pieces, but kept the general idea…alternatively you can use rocket salad and walnuts instead of baby spinach and Pecan nuts.
Super fresh. Ideal for summer and I just can’t get enough!!

Ingredients for 2 as main dish (or 4 as starter)

150g Baby spinach (or rocket salad)
1 pack (150g) of Goat cream cheese
50g Pecan nuts (or walnuts)
Crema di Balsamico
2 tablespoons Olive oil
Salt & pepper
Wash the spinach salad and place in each bowl. Then cut the watermelon in bite-sized pieces and place on top of the salad. Remove the goat cheese from its pack and carefully cut litte dices and drape on top of the watermelon. Now sprinkle the Pecan nuts over the salad. To serve pour the olive oil and Crema di Balsamico on top of the salad as dressing, add salt and pepper to taste and serve immediately.
