With the nice weather outside I really crave a healthy lunch or dinner. My fridge still had a bit of minced meat left, so I thought I might aswell prepare a salad with meatballs! It turned out really nice and due to the fact that meatballs are delicious warm and cold, it’s great to prepare.

Ingredients for 2
For the salad:
3 Salad hearts
1 Avocado
4 Medjool dates
300g minced meat
2 tablespoons sunflower oil
Salt & pepper

For the dressing:
1 teaspoon Dijon mustard with Honey (au Miel)
1 teaspoon L’Ancienne mustard
2 tablespoons olive oil
1 tablespoon white balsamic vinegar
Salt & pepper
Just add more of the ratio if you need additional dressing.

Directions
Wash and dry the salad hearts. I always cut into bite sized pieces before putting into the salad spinner. Add the avocado and the dates. Prepare the dressing by mixing the ingredients above.
Heat a pan with the sunflower oil. Mix the minced meat with salt and pepper and prepare little round meatballs. Place them in the pan and let fry for approx. 1-2 minutes on each side. Then let the excessive oil drip on a piece of kitchen roll. Now mix together everything and serve! That’s it!
