It’s getting colder outside and at least I am craving warmer food in the evenings. Next to delicious soups, a stroganoff is an ideal addition to the dinner menu. It’s fast and easy to prepare.

Ingredients for 2-4 people
Approx. 150g rice
1-2 tablespoon sunflower oil (possibly a littel more)
250g chicken breast
1/4 liter of chicken broth
150g mushrooms, sliced
1 onion, diced
250ml liquid cream
A generous splash of white wine or Noilly Prat
Fresh chives, chopped
Salt & Pepper
Approx. 1 teaspoon cornstarch (if needed)
Directions
Prepare the rice according to the pack.
While the rice is cooking, prepare the rest. Cut chicken into bite-sized bits. Heat a pan with the sunflower oil and fry the chicken. Remove chicken once ads. Cut the mushrooms into slices and the onion into fine dices and add to the mushroom mix, fry in a pan. Deglaze with the white wine, add chicken broth. Once heated, add the liquid cream last together with the chicken, salt and pepper to taste and add the freshly chopped chives last. If the sauce is too liquid, just add a little cornstarch to thicken it.
To serve, place rice on a plate and top with the chicken mix, sprinkle a few chopped chives on top as garnish.
