The wonderful Christmas and Advent time is over and after all the delicious temptations something light and healthy is just what you (or at least I) need for a good start to the new year. A former salad, that is now fancily called buddha bowl is the ideal solution.

See what you need to prepare here:Ingredients for hungry 2 as a main course
1 mango, diced
1 large avocado, sliced
1 pack of peeled edamame beans
150-200g sashimi quality fresh salmon
Salt & pepper
Optional: sunflower seeds to drizzle on top

For the yoghurt sauce:
5-6 leaves of fresh mint, chopped
3 tablespoons of Greek yoghurt
3 tablespoons of plain yoghurt
Zest of ½ a lime
Juice of ½ a lime
Salt & pepper

Directions
Halve the avocado, remove the pit and cut into slices. Cut mango and mozzarella into little squares.

Cut the salmon into little squares. Neatly arrange each ingredient in a bowl. Add the peeled edamame beans.

For the yoghurt sauce: Mix the yoghurts, the chopped mint and lime zest and juice together and add salt and pepper to taste. Then add to the rest of the ingredients in the bowl and enjoy immediately.
