Easter is around the corner and you always need a backup plan if relatives or friends come by unannounced (or announced and you forgot to prepare for that). This easy cherry cake is super quick to make and except for the eggs, you should have everything in the house…

600g morello cherries (I used the ones out of the glass)
30g butter, melted
1 pack of vanilla sugar
A pinch of salt
Pre-heat the oven to 180° C (air circulation).
Butter a baking tin or round quiche form.
Drain the cherries (I kept the juice to drink) and then put into the form.
Melt the butter. Then mix rest of the ingredients above together and pour over the cherries.
Bake in the oven for 30-40 minutes until golden brown. Serve warm or cold – delicious also with whipped cream!
