I had this salad at a close friends place a few years ago and it is just so deliciously easy to prepare, that I made my own version here. Plus the good thing is, you can have both in the house and can prepare if you get spontaneous guests, as feta has a really long-lasting expiration date. Give it a try! Ideal also for a BBQ – the season is coming!

220g beetroot (pre-cooked – I used the ones that you can buy in a glass)
½ – 1 pack feta cheese (approx. 100g)
1 shallot (finely diced)
Salt & pepper
Cut the beetroot into squares, dice the shallot finely and mix together. Crumble the feta on top. Add 1-2 tablespoons olive oil and season with salt and pepper.
Alternative: You can also add walnuts or orange slices!
