Currants are such a delicious and beautiful looking berry. These muffins are simple to make and just look super nice with the little red dots. We have some growing in the garden, but they weren’t quite ripe just yet, so I used bought ones! But yummy scrummy in any case!

Ingredients
125g butter
125g sugar
200g flour
3 eggs
100g ripe currants
2 teaspoons baking powder
100g (vanilla) yoghurt (if you don’t have yoghurt in the house you can also prepare without)
Directions
Pre-heat the oven to 175°C (oven set to air circulation).
In a mixing bowl combine butter and sugar until fluffy. Add eggs and flour, baking powder and yoghurt. Fold in the currants carefully, so they don’t squish. Pour the batter into a muffin baking form.
Bake for approx. 20 minutes. Use a wooden skewer after 15 minutes to check if the cake is ready – if still doughy, leave in for another bit, if the skewer is dry, its ready. Serve plain, with whipped cream or vanilla ice cream!
