Often I search for easy dinner recipes, that don’t take long to prepare and that give me time to spend with my family. But are still healthy and delicious and don’t involve pasta or pizza 🙂 And this is just one of those recipes! Simple to prepare with few ingredients, healthy and just delicious.

Ingredients for 2 as a main course
400g fresh codfish
1 pack of cherry tomatoes
100g small new potatoes
2 small onions
4-6 sprigs of fresh thyme
Salt & pepper
3-4 tablespoons olive oil
Directions
Pre-heat the oven to 180°C (air circulation).
Place the fish in a larger casserole. Cut the potatoes in half or best even quarter them, peel and quarter the onions and wash and pat dry the tomatoes. Place all of the ingredients around the fish. Place thyme sprigs on top and salt & pepper the vegetables.
Generously pour olive oil over everything. Place aluminium foil over the casserole (so the fish doesn’t dry out) and place in the oven for approx. 30 minutes.
