The clocks have been switched to winter time and that’s just about the time when I get the feeling that I need to bake cookies! And here is just the perfect start for the season – they have just the right touch for getting into the festive mood, without overdoing it. And so brilliantly simple to prepare…

Ingredients
4 egg whites
150g sugar
150g Pecan nuts, chopped (alternatively use walnuts)
1 tablespoon corn starch (optional)
A pinch of cinnamon
Optional: keep some of the Pecan nuts whole and place on top of the ‘clouds’
Directions
Preheat the oven to 150°C (air circulation).
Beat the egg whites and carefully add the sugar, around half way through.
In a separate bowl mix together the chopped Pecan nuts, corn starch and cinnamon.
Once the egg whites are ready, carefully fold in the nut mix.
Prepare a baking tray with parchment paper. Now use two teaspoons to make little heaps next to each other, a little spice in between, so they don’t collide.
Place in the oven for 30-40 minutes until slightly golden brown.
