Yoghurt Panna Cotta with Fruit Compote

Don’t you just love panna cotta? I absolutely adore it, but always have a tiny bit of a bad conscience when I eat it. That’s what made me think of a lighter version: with Greek yoghurt! It’s a little more «sour» due to the yoghurt and great in combination with fruit compote (any sort you like!).

Poppy-Seed Grapefruit Cake

Not quite sure what caught my eye, but I am guessing it was the poppy seeds, when I stumbled over this recipe. Its fairly simple to make and with the Grapefruit it really is nice and fresh! I didn’t use up all the batter for the cake and made mini bundt cakes on top, to snack in between!

Upside-Down Carrot Cake

Loving carrot cakes in general, I just had to try out this upside-down version. The horizontal lines on the cake are actually the carrot strips. The cake is really delicious and best when served warm. And with the carrots, a great idea to make for Easter!

Coconut Tapioca Pudding with Mango

We were invited to a great weekend out in the snow lately and our hosts made this absolutely delicious coconut tapioca pudding. Originally it was supposed to be a dessert, but we ended up eating the pudding for breakfast and I am now absolutely addicted! If you like rice pudding, you’re probably going to like tapioca. Sugared Cranberries

I stumbled over this recipe and just loved the look of these beautiful red berries, covered in sugar, making them look all wintery! Plus after trying them, I can proudly say they are as tasty as they look! By the way, got these super beautiful Le Creuset heart-shaped baking forms from lovely friends for Christmas! As one of the biggest avocado lovers in the whole wide world (my friends can testify!), I just had to try this recipe. I found it while flipping through the Cosmopolitan magazine. A nutty, (I think vegan), fresh tart, which is just a little different than anything else you have probably had in the last months. Plus: no need to bake!
