Sweet Potato & Halloumi Salad with Cashews and Pomegranate Seeds

I stumbled upon this salad and the look of it just took me in. The colors match wonderfully and taste is just divine. It’s a little work to prepare, but not too much and definitely worth it! It’s perfect as a side for a BBQ, but also rich enough as a lunch salad.

Here’s what you need to prepare:

Oven Cauliflower & Chickpeas with Tahini-Lemon dressing

Looking for more healthy, but easy to prepare home office meals that more or less cook themselves, I stumbled upon this gem and of course wanted to share. Generally I really enjoy oven-meals on those days at home, where only little prep is needed, but you are not left hungry. Looking forward to what you think – drop me a line! I can by the way really see this dish as a side of a BBQ with chicken or a steak in the summer…

Strawberry & White Chocolate Cake

This wonderful moist, sweet and delicious cake resulted from the specific wish of my now 6 year old, as he requested a strawberry cake, as he prefers those to raspberries (so definitely you can substitute those), but it was not allowed to be a cake with strawberries on top but inside the cake and it needed to have a ‘white as well as dark’ chocolate coating plus smarties (of course separated and placed as rainbow colors) on top. Any questions – hahaha! So here it is…the good part, the cake itself was fast to prepare:

Magenbrot (similarities with Gingerbread)

A delicious speciality you often come across on Christmas markets! It’s a small, sweet chocolate glazed biscuit that shares similarities with a gingerbread cookie. A friend made it herself lately and I adored it – so of course I had to repeat myself! Absolutely recommendable as a lovely snack during the Christmas season!

Minced Meat, Carrot and Potato Stew

The winter has been cold and snowy and what better can you heat up with, than a delicious stew. My friend Caro made it once and I have honestly been making this soup nearly every week since. It’s super fast to prepare or you can also pre-prepare it and eat later. In any case, one of my favorite finds this winter.

By the way, you can also put soup noodles inside instead of the potatoes. I always need to prepare a portion, as my oldest doesn’t like the cooked potatoes – grr! Plus I always add the dried spices later…
