Ingredients
350g flour
130g sugar
2 packs of vanilla sugar
4 egg yolks
250g butter
1 or 2 sorts of jelly (I used home made quince jelly and blackberry jam without seeds)
Directions
Heat the oven to 175° C. Mix all ingredients together to a dough (yes, super tasty – even unbaked). Roll small bits of dough and place the dough balls on a lined baking tray. Now use the back of a wooden spoon (it needs to be a round end), dip into a bit of flour, so it doesn’t stick and twist little «dimples» into the dough balls and fill with jelly/jam. Bake for 10-15 minutes. Let the cookies cool slightly, before you remove them from the baking tray, so they don’t break.
Tip on the side: Ideal to first make these cookies and use the leftover egg whites to make the coconut macaroons!
