These are one of the most liked cookies in my family (and in-law family and friends). Very fun to make, also with kids, because of all the cutting out! Another plus: they go real fast!

1 pinch of salt
1 teaspoon cinnamon
zest of half a lemon
Mix all ingredients together (and yes, super tasty again – even unbaked) and let the dough cool for 1 hour in the fridge. Meanwhile heat the oven to 180° C. Spread some flour on a kitchen board and use a rolling pin to spread out the dough fairly flat (take approx. 1/3 of the dough at a time). Now use lots of different cookie cutters to cut out the cookies. Place them on a lined baking tray and bake for 10-15 minutes in the pre-heated oven. Tadaa!!
