These are really yummy Christmas cookies (originally from Austria, I think). The traditionally crescent-shaped cookies have a great almond taste and just melt in your mouth. Mmhhhh!

Ingredients
300g flour
125g sugar
1 pack of vanilla sugar
3 egg yolks
125g ground almonds
250g butter
Plus: 2-3 packs of vanilla sugar to roll the cookies in

Directions
Mix all ingredients together and let the dough cool for 1 hour in the fridge. Meanwhile heat the oven to 180° C. Prepare little crescent-shaped cookies (don’t make them too big – they will enlarge in the oven while baking) and place them on a lined baking tray and bake for 10-12 minutes in the pre-heated oven. Let the baked cookies cool down just shortly so they don’t break in half and then gently toss them in vanilla sugar whilst they are still quite hot.

How to make homemade vanilla sugar? It’s real simple! You need an air-tight jar or tupperware. Fill in sugar together with one (or more) freshly scraped-out vanilla bean. Shake from time to time and after a few days, you’ll notice the sugar takes on the smell & taste of vanilla. That’s it!
