Two weeks ago, a very close friend gave birth to her second son. Of course us girls went to visit her! And what better present can you bring than a box of homemade cookies to enjoy and chit chat over! You don’t need the pearls on top, but they just looked nice!

Ingredients for approx. 50 cookies

250g soft butter (not melted)
300g sugar (if preparing for kids, I only use 150g sugar and no glaze)
2 eggs
425g ricotta cheese
1-2 tablespoons vanilla extract
500g flour
1 teaspoon baking powder
1 teaspoon baking soda

For the glaze:
4 tablespoons milk
100g confectioners’ sugar
1 teaspoon almond extract
Sprinkles/Pearls (optional)

Dictections
Pre-heat the oven to 175°C (oven set to air circulation).

Cream butter and sugar together in a bowl until light and fluffy. Add the eggs, ricotta cheese, vanilla extract and mix until well combined. In a separate bowl add flour, baking soda and baking powder and  then add to the ricotta mixture until all is mixed well.

Heap a teaspoon full of dough and roll into a ball (I used a second teaspoon for help) and place onto a lined baking sheet with a little space in between them, as they will spread out a little. Continue with the rest of the dough.

Bake the cookies for approx. 8-10 minutes, until the bottoms turn very light brown. Remove the tray and let cool for a few minutes before you transfer the cookies to a cooling rack.

While the cookies are in the oven, prepare the glaze by mixing the milk, confectioners’ sugar and almond extract together until smooth. Use a basting brush to spread the glaze onto each cookie. If you want to add sprinkles – immediately top with sprinkles, so they stick!
