
A few weeks ago I teased you guys with an upcoming recipe for the best (at least in my eyes) Bolognese sauce. The special trick is the lemon. It gives the sauce a very fresh taste and is just to die for.

Ingredients

1 tablespoon olive oil
1 large onion (finely diced)
1kg ground beef
3-4 carrots (finely diced)
1 vegetable bouillon cube
1.5 kg crushed tomatoes (without skin)
200g tomato purée
½ glass red wine
1 lemon (the whole lemon in slices without pits!)
1 tablespoon brown sugar
Salt & pepper
Directions
Heat the olive oil in a large pot, add the chopped onion and stir until glazed, then add the ground beef. Peel the carrots and finely dice them with a sharp knife and then add to the beef mix together with the vegetable bouillon cube (no need to dissolve with water).

Now add the tomatoes, the tomato purée and red wine. Wash the lemon and cut into slices, carefully removing any pits, then add to the Bolognese sauce together with the sugar.

Stir well and let simmer for 1-2 hours on reduced heat, stirring occasionally. Remove the lemon slices. Season with salt & pepper to taste before serving.

Serve with pasta (Spaghetti or Penne) and freshly grated Parmesan cheese. Alternatively use the Bolognese sauce for a Rigatoni Pasta Pie or Lasagne!

Ah, never thought to add lemon here. It’s always nice to have that citrus edge. Thanks for the tip!
