A pink drink is always a good idea. And with rhubarb around everywhere, it is just a must to give these 2 cocktails or this 1 mocktail a try! Plus, you can «re-use» the rhubarb purée for a delicious dessert on top! Stay tuned for the recipe!

Base Ingredients (for rhubarb purée and syrup)
10-12 stalks of red rhubarb
3 tablespoons agave syrup for the compote (add more if still too sour)
2-3 tablespoons sugar for rhubarb syrup
Mint leaves for decoration
Ice cubes
Sugar for the sugar frosted rim on the glasses

Directions
For the rhubarb purée and rhubarb syrup:
Peel the rhubarb stalks. It seems like they don’t peel properly, but as you cut the rhubarb into 3cm lengths, enough will be peeled off. Steam the rhubarb over approx. 1 liter of water (alternatively cook in water) for approx. 5-10 minutes until soft (but not soggy).

If you steamed the rhubarb, place the compote into a pot and sweeten with agave syrup (if you don’t have agave syrup, use sugar) or if you cooked the rhubarb, strain it, keeping the rhubarb water (just like above, then sweeten the compote with agave syrup)!

Sweeten the still warm rhubarb water with sugar and stir until the sugar has dissolved. Let cool and then your rhubarb syrup is ready.

For the sugar frosted rim on the glasses:
You need 2 saucers/small plates. Add one with a bit of the cooled off rhubarb syrup and the other one with white sugar. Tip the glass rim carefully into the syrup and then onto the saucer with the sugar. Make sure you cover the whole rim evenly with the sugar. Then let dry for approx. 30 minutes.

The Rhubarb Pink Drink Mocktail (makes 6 glasses):
Additional Ingredients to the Base ones above:
1 liter bottle of Schweppes «Russian Wild Berry» (if you don’t have this, use clear lemonade instead (e.g. Sprite))

Place a few ice cubes into the glasses. Fill approx. 1/3 of the glasses with rhubarb syrup. Top with Schweppes «Russian Wild Berry» (or alternatively clear lemonade) and decorate with mint leaves.

The Rhubarb Pink Drink Cocktail (makes 6 glasses):
Additional Ingredients to the Base ones above:
1 liter bottle of Schweppes «Russian Wild Berry» (if you don’t have this, use clear lemonade instead (e.g. Sprite))
Vodka (1-2 schnapps glasses per glass, depending on how strong you want the drink to be)

Follow the directions of the mocktail above and add vodka to the mix! Tadaa!

The Rhubarb Pink Drink Aperitif (makes 6 glasses):
Additional Ingredients to the Base ones above:
1-2 bottles of Prosecco

Place a few ice cubes into the glasses. Fill approx. 1/3 of the glasses with rhubarb syrup. Top with Prosecco and decorate with mint leaves. I serve this drink in large redwine glasses!

Note on the side:
I used quite a lot of water for the syrup. If you use less and sweeten a lot, you will need less inside the glasses!
Instead of the mint leaves, you can also use rosemary or basil leaves! Give it a try!
