Don’t you just love it, when the first few rays of sunshine finally make it through the clouds and you just feel like detoxing your body? Well here is a fresh idea for a delicious, easy salad!

Ingredients (for 2)
2 medium fennel (keep the green bits for garnish)
2 pink grapefruits (including the juice!)
2 teaspoon olive oil
1 ripe larger avocado
Salt & pepper

Directions
Wash the fennel and cut in half (keep the green leaves for garnish) and cut off the top and cut a triangle to remove the bottom part. Use a mandolin slicer to prepare the fennel into thin slices (alternatively use a sharp knife) in a bowl.

Cut off the rim of the grapefruits and use a knife to slice out the fruit filets. Best is to do this over the same bowl, so you keep as much of the juice as this is part of your dressing – now just add the olive oil and mix. Garnish with the fennel greens.

Cut the avocado lengthwise, remove the pit and peel off the skin. Now cut each half of the avocado into slices and place onto the fennel salad. Sprinkle with salt & pepper to taste.
