Not sure what to cook for dessert for your next dinner or just looking for an inspiration for a cake/tart along your coffee or tea? This is a very simple and yet absolutely delicious recipe. Plus the good thing is, that you can even prepare the cake bottom a day before actually serving the cake. That leaves you time on the day. And it’s gluten-free!!

Ingredients
Mom’s recipe
4 egg whites
200g ground almonds
200g icing sugar (or very fine granulated sugar)
1 tablespoon starch
1 teaspoon baking powder
350ml whipping cream
1 large can of pear halves, drained and roughly pureed (approx. 800g)
50g dark chocolate

Directions
Pre-heat the oven to 180°C top and bottom heat.
Divide the egg whites from the egg yolks (you only need the whites).
Whisk the egg whites first for approx. 1 minute, then add the icing sugar bit by bit, until they form stiff peaks. Fold the starch, baking powder and almonds under the mix. Pour the batter into a quiche form.

Now place in the oven for 35-40 minutes and then let cool.

Meanwhile prepare the whipping cream (I did not add any additional sugar). Drain the pear halves and roughly puree, so you still have bits. Grate the chocolate to drizzle on top later.

Shortly before serving, spread the whipped cream on top of the baked batter.

Then add the pear puree and garnish with the chocolate.
