Adapted from
400g seedless grapes (I used both red and green grapes)
1 tablespoon sugar (to caramelize the grapes!)
1-2 tablespoons water
1-2 sprigs fresh thyme
Salt & pepper
Olive oil
A few slices baguette bread
80g spreadable goat cheese (I used «La Tur»)
Fresh mint leaves
Balsamic vinegar (I used a quite viscous one)

Combine grapes, sugar, water, thyme, salt and pepper in a small pot. Cook over medium heat until the grapes soften and burst. Then set the pot aside to cool.


Pour olive oil into a saucepan and heat (medium heat). Slice the baguette bread into fairly thin slices and place into a large saucepan and fry until golden brown on both sides. Let cool slightly.

Spread goat cheese onto the toasted bread slices, add the caramelized grapes, drizzle with a little balsamic vinegar and top with finely cut mint leaves for decoration. Add salt & pepper to taste. Enjoy!


Alternative: Brush the sliced baguette bread with olive oil and toast in the oven (200° air circulation) for 10-15 minutes.
