Easter time has passed and sometimes you just have too many eggs left, that you had colored and boiled especially. But what can you do with all the eggs? Here is a nice and simple recipe to use up all the excessive eggs and is perfect for the whole family!

Ingredients for 4
Approx. 500g potatoes, pre-cooked
6-10 hard boiled eggs
1 fresh egg
200ml cream
100ml milk
150g grated gouda (or similar) cheese (or more if you need)
½ teaspoon ground paprika (spice)
Salt & pepper
Directions
Pre-heat the oven to 160°C (air circulation).
Boil the eggs and cook the potatoes. Cut into slices.
In a bowl, mix together cream, milk and egg and season with paprika and salt & pepper.
In a casserole, layer a row of potato slices, then egg slices and repeat until you have used up all eggs and potatoes. Now pour over the cream mixture and generously sprinkle the cheese on top.
Put in the oven for 30 minutes, until the cheese has melted (sorry, my cheese wasn´t ideal so it didn´t melt properly) and is golden brown.
