Here goes another weekday dinner idea. Fairly simple to prepare, you just need a few of the typical sauces that Asian dishes nearly always include. In the end you have a nice and light dinner alternative, easy of course also to add meat, if you feel like it.

Ingredients for 4
200g rice noodles
200g sugar snap peas (Zuckerschoten)
500g broccoli
4 spring onions
1 bunch of fresh cilantro
2-3 tablespoons roasted and salted peanuts
Juice of ½ lemon
2 teaspoons sesame seeds
5 teaspoons sesame oil
2-3 tablespoons soy sauce
2 tablespoons oyster sauce

Directions
Chop half of the peanuts and mix with the sesame seeds and set aside. Prepare the noodles as per the pack description.

Wash the broccoli and cut into bite-size bits. Wash the sugar snap peas and cut the ends. Wash and cut the spring onions in 2cm long bits.

Heat oil in a wok or wok-style pan and fry the vegetables for 10 minutes, adding a little water (2-3 tablespoons). Add soy sauce, oyster sauce and lemon juice.

Add the noodles to the pan and carefully stir the mix.

Wash and cut the cilantro.

Prepare the plates with the stir-fry and sprinkle with fresh cilantro just before serving.
