Some time ago I stumbled over this interesting way of preparing salad. What I like is the fact, that it’s a light dinner, easy to prepare and still you have something warm in your tummy on these colder days heading towards Christmas (and all the deliciousness that goes with it). Works really well with a fried egg too! Give it a try!

Ingredients for 2
3 Salad hearts
2 eggs
1 pack of diced bacon
2 tablespoons sunflower oil
Balsamic vinegar (I used a quite viscous one)
Salt & pepper
Directions
Wash and dry the salad hearts (you need to leave them whole). Cut off the bottom part and cut in half lengthwise.
Heat water in a pot to boil the eggs. Depending on the size of your eggs, you need 5-7 minutes for them to be soft-boiled.
Heat a pan (no oil needed) and fry the bacon bits. Once ready, let the bacon rest on a kitchen towel to get rid of any excessive oil.
Either you can use the same pan as for the bacon or a new one (not too hot) with the sunflower oil. Place the salad halves in the pan and let fry for approx. 1-2 minutes on each side until lightly browned.
To serve, place the salad hearts on a plate, cut the soft-boiled egg in half and srinkle the bacon bits on top. Then drizzle a bit of balsamic vinegar over everything and enjoy!

I have to admit I love salad fresh, but fried looks very interesting, I’d be willing to try.. 🙂
