Quiche is a dish that is just ideal. You can serve it warm or cold. You can eat as dinner with a salad for example, it’s ideal to take along to a picnic, perfect for a brunch or just as a snack. An absolute multi-purpose food! You can save it for a day or two (and either eat cold or re-heat in the oven).

For the filling:
1 zucchini
1 pack of cherry tomatoes
100-150g bacon bits
250ml liquid cream
3 eggs
150g mixed grated cheese (or Gouda)
Salt & pepper

For the crust:
200g flour
100g butter
1/2 teaspoon salt
3-4 tablespoons cold water

Tip on the side: You can of course also buy a ready-made crust!

Pre-heat the oven to 200°C (top and bottom heat).

For the crust:
In a mixer, combine all the crust ingredients and then spread the dough into a pie form evenly.


For the filling:
Wash and then cut the zucchini into slices. Fry the bacon bits in a pan without oil and add the zucchini slices for 5-10 minutes.
In the meantime mix the eggs, liquid cream, grated cheese, salt and pepper in a bowl.
Now lay the zucchini slices onto the crust dough, spread the bacon on top.

Pour the egg-mix over the veggies. Wash the cherry tomatoes and cut in half and neatly decorate on top with the cut side up.

Place in the oven for approx. 30 minutes. That’s it!
