Salmon and pineapple? Yes, your eyes didn’t trick you. I stumbled over this combo and just thought I’d give it a try. And another yes, it was great! Super easy to prepare, light and delicious and a perfect meal all year around!!

Ingredients for 2 as a main course
2 salmon fillets
1/2 a pineapple
Additionally you need tin foil to wrap
For the glaze:
2 tablespoons olive oil
1/2 a clove of garlic, crushed
2 teaspoons honey mustard
1 teaspoon liquid honey
Juice of 1/2 a lemon
Pepper (I’d salt later, as the fish is usually quite salty)
2 leaves of fresh mint
Directions
Pre-heat the oven to 200°C (air circulation).
Prepare 2 squares of tin foil, large enough to fold into little parcels later. Prepare the pineapple and cut into slices and divide into 2 portions. Lay them in the middle of the foil in an even layer and place the salmon fillet on top.
For the glaze: Mix all ingredients together, except the mint leaves. Spread on top of the salmon fillets. Place the mint leaf on top last.
Now fold the tin foil carefully so you have a little parcel – try to keep a little room so the air can circulate inside and that you don’t squish the glaze onto the foil.
Place in the oven for approx. 20 minutes. Remove and either serve in the foil or remove and place on a heated plate.
If you are looking for a side dish, you could either use some rice or broccoli for example.
