The more I make quiches, the more I love them. It’s just such a perfect combination – easy to make, you can eat it warm or cold and you can pre-prepare them! This version with salmon, spinach and feta is very fresh and ideal for these warm and sunny temperatures.

Ingredients
For the filling:
200g salmon filets (I used frozen ones, defrosted)
300g spinach (I used frozen ones, defrosted)
1 small onion
200g feta cheese
3 eggs
250ml liquid cream
150g mixed grated cheese (or Gouda)
Salt & pepper
For the crust:
200g flour
100g butter
1/2 teaspoon salt
3-4 tablespoons cold water
Tip on the side: You can of course also buy a ready-made crust!
Directions
Pre-heat the oven to 200°C (top and bottom heat).
For the crust:
In a mixer (or by hand), combine all the crust ingredients and then spread the dough into a pie form evenly.
For the filling:
In a pan, glaze the chopped onion. Add the defrosted and squeezed out (so little water as possible) spinach for 5-10 minutes.
Cut the salmon and feta cheese into little squares.
In the meantime mix the eggs, liquid cream, grated cheese, salt and pepper in a bowl.
Now place the spinach, salmon and feta onto the prepared crust. Pour over the egg mix evenly on top and place in the oven for approx. 30 minutes. And you are done!
Serve warm or cold. A salad is a nice addition as side dish.

Does the salmon need to be cooked before putting in the quiche or can it be raw?

Raw is fine, that’s how I do it. You can see it on the pictures! Just defrost the salmon, if you are using frozen ones (if needed quickly, let cold (!) water run over the frozen salmon and then cut and put into the quiche)! Hope that helps!
