Oh how I love vacation. That always means time to try out new recipes and last time we were at my inlaws place again and prepared this absolutely delicious Lemon Chicken. Once again a quite simple recipe and more or less only one baking tray to prepare all at the same time!

Ingredients for 4-6
1kg new potatoes
3-4 fresh onions (smaller ones), quartered
300g green beans
Olive oil
4 small chickens or 1 large one
2-3 lemons
Fresh sage leaves
Olive oil
Salt & Pepper
Butter

For the stuffing:
Lemon slices
Fresh sage leaves
A few fresh garlic cloves

Directions
Pre-heat the oven to 200°C (circulating air).

Prepare the chicken by stuffing it with 2-3 fresh sage leaves and 1-2 lemon slices. Oil the chicken with olive oil and season with salt & pepper.

Place into a deeper baking try (or casserole). Wash and but the potatoes and prepare the onions and cut them into quarters, plus add a few fresh sage leaves and garlic cloves. Add all to the baking try. Pour olive oil over all ingredients generously. Place in the oven for approx. 30-40 minutes, until golden brown.

In the meantime wash the green beans and pat them dry. Boil or steam the beans in a pot with water until they are nearly ready (10-15 minutes). Remove and add a little fresh butter on top.

Serve everything at the same time!
