The summer is finally here and next to bbq-ing nearly every day (or eating a delicious and light salad), sometimes a little variation is needed. These round zucchinis are a fun alternative to the lengthy ones I usually buy. But when I stumbled upon these beauties, I wanted to give them a try. And here goes…

This is what you need to prepare:

Ingredients for hungry 2
350g minced meat
4 medium sized round zucchinis (yellow and green)
100g feta cheese
Salt & pepper
Approx. 150ml vegetable broth
A handful of grated cheese to sprinkle on the zucchinis

Directions
Pre-heat the oven to 200°C (air circulation).
In a pan, fry the minced meat. Wash, then cut off the top of the zucchinis. Scrape out the insides and cut in pieces. Then add to the pan for approx. 15 minutes. Add the vegetable broth. Crumble the feta cheese in last, but don’t let it melt completely.

Now place the zucchinis into a casserole form and stuff them with the minced meat mix. Pour any remaining fluid into the form (if you don’t have enough in the pan, add a little more vegetable broth). Cover with the tops and place in the oven for approx. 20 minutes. Remove from the oven, place the tops next to the zucchinis and sprinkle with grated cheese and put back in the oven for 5-10 minutes until the cheese has melted and browned slightly.

When serving, just place the zucchinis into a flat bowl, pouring any additional fluid on top!
